Can you imagine that tasty chutney can be made from the peels of a vegetable? Yes, this is indeed true. My mother prepares chutney with the peels of ridgegourd, which is very tasty!

Ingredients Serving: 4

  1. 3 tablespoons urad dal (split black gram)
  2. 2 tablespoons cumin seeds
  3. 2 green chillies (medium size)
  4. A small lemon sized ball of tamarind (soaked in water for a few minutes)
  5. 2 red chillies (small or medium size, may vary as per taste)
  6. A pinch of asafetida (hing)
  7. salt as per taste

Instructions

  1. Heat oil in a wok/ kadhai. Fry dal, red chillies, cumin seeds and asafoetida for a minute or two. Keep aside to cool.
  2. Fry separately, the washed peels of ridge gourd and green chillies (cut into pieces) for minutes. Turn off the heat. Add tamarind and saute for few seconds.Cool it.
  3. Add the all the above ingredients from the first step to a blender. Grind coarsely. Add the ingredients from Step 2 and salt.Grind until a granular consistency is achieved.
  4. Remove this chutney into a bowl and serve.
