Ingredients Serving: 2

  1. For roti-
  2. Jowar flour -1/2 cup
  3. Water-1/2 cup
  4. salt as per taste
  5. For jhunka-
  6. Besan flour -4 tbsp
  7. Green chillies -2 nos
  8. Onions chopped -1 no
  9. Garlic pods-2 nos
  10. Curry leaves-4-5
  11. Hing-1/2 tsp
  12. Coriander leaves -3 tbsp
  13. Water as required
  14. salt as per taste
  15. Oil
  16. Mustard seeds-1 tsp
  17. Jeera-1/2 tsp
  18. Turmeric powder-1/2 tsp
  19. Lemon juice-1 tsp

Instructions

  1. Keep water for boiling, add salt. When water boils, lower the flame, and add jowar flour. Mix once, switch off the flame, close the lid and keep for 5 mins. When the flour is still warm, start kneading it for 10 to 15 mins with little flour.
  2. Kneading is very important to get the right consistency of dough. Now take small roundels, knead again and using the fingers start tapping it or roll it using rolling pin dusting it with little flour.
  3. Cook the rotti with dusted flour facing upwards on hot skillet. Apply little water on this surface. Wait until the water evaporates and appearance of few bubbles. Now turn it upside down and cook.
  4. Make a paste of Besan in little water. Keep aside.Take a pan, add oil, mustard seeds, Jeera, saute well. Now add green chillies, curry leaves, Hing, saute well.Now add onion, garlic pieces, saute well. Add water, salt, turmeric powder.
  5. Lower the flame and add Besan paste, cook with lid closed for few minutes. Add lemon juice and serve hot with bhakri.
