Ingredients to make Pav bhaji

  • Veggies (quantity as per your choice) - 2 medium carrot, few french beans, 4 medium potato, 2 medium capsicum, 1 semi medium cauliflower, spring onion leaves, green peas
  • Finely chopped onions - 2 medium
  • tomato grated - 2 large
  • lemon juice 2 tbspn
  • red chilli powder
  • salt
  • Black pepper crushed 2 tspn
  • Pav bhaji masala (I have prepared the masala at home. You can use the masala packet from market)
  • butter
  • oil
  • Garnish - chopped onion and chopped coriander
  • Pav cut in half

How to make Pav bhaji

  1. Roughly chop the veggies and boil it in cooker with little salt and water for 2 whistles
  2. When the veggies boil, strain the boiled veggies from excess water. Do not throw the stock water.
  3. Mash the veggies (not too smoothly) and keep aside.
  4. In a pan heat oil and add the chopped onion.
  5. When the onion turns pink add the grated tomato and mix well. Keep on stirring.
  6. Add red chilli powder, salt, pav bhaji masala, green chilli and mix well.
  7. From time to time keep on sprinkling the stock water and stir the masala till oil starts releasing.
  8. Now add the mashed veggies and mix properly. Add butter and mix well. When the bhaji starts releasing oil add the crushed black pepper and lemon juice.
  9. Remove the pan from flame and garnish wiyh coriander and chopped onion.
  10. Now heat a tava. Apply butter on both side of the pav and heat it from both side till it browns.
  11. Serve hot with the bhaji.

My Tip:

You can add more veggies of your choice and also paneer cubes in the end.
