ABOUT Pumpkin carrot halwa RECIPE

A delightful dessert made with the goodness of pumpkin and carrots, and to top it, there is no added sugar and is replaced bt healthy jaggery.

Ingredients Serving: 3

  1. a small pumpkin [grated]
  2. Carrot-2-3 [grated]
  3. Cardamom seeds - 2
  4. Jaggery [crushed] - 1/4 th cup
  5. Water to dissolve jaggery- 1 cup
  6. Coconut--1/2 cup [grated]
  7. RAISINS [handful]
  8. Ghee-3-4tbsp
  9. Saffron sprigs- few strands

Instructions

  1. Heat ghee in a pan
  2. Now add cardamom seeds and let them splutter.
  3. Now add grated pumpkin and saute well. Roast it for sometime.
  4. Now add grated carrot and roast well both of them for few minutes till it gives some aroma and cooked properly.
  5. Now dissolve the crushed jaggery in water with a spoon
  6. Now add this jaggery syrup in halwa and let it cook on a low flame.
  7. Add some grated coconut also and mix well, cook for some more time .
  8. Now add saffron sprigs and mix well for sometime.
  9. Let it cook till it gets thick and dark
  10. Now put it on a serving plate in a round circle
  11. Now spread grated coconut inside the circle
  12. Then place raisins inside that coconut circle and serve
