This diwali I bought a microwave and all day I made new new recipes. I like undhiyu very much. I have tried this regular recipe in a microwave, for the first time and it was successful.

sweet potato &normal potato ½ cup each
chopped purple Yaam ½ cup
Small sized brinjal - 4
green peas ½ cup
carrot ½ cup
pegion peas ½ cup
broad beans 1 cup
Green garlic finely chopped ½ cup
Green chilly finely chopped 1 tbsp
Coconut grated ½ cup
chopped ginger 1 tbsp
Raisins 1 tbsp
rajasthani chilly 2
sesame 1 tbsp
Turmeric powder 2 tsp
garam masala powder 1 tbsp
Sugar to taste
Oil 1 tbsp
banana 1
Lemon juice 1 tbsp
Methi balls Ingredients – methi leaves finely chopped ½ cup
Besan 1 cup
wheat flour ½ cup
Sugar 1 tsp
Oil 1 tbsp
Turmeric powder ½ tsp
Sesame seeds 1 tbsp
Instructions
For the methi balls, Mix all ingredients mentioned for it and make a dough , make small sized balls.
For the Undhiyonm, In a bowl place all the vegetable cut into small sizes.
another bowl make masala by adding finely chopped corianders, green garlic, methi leaves, ginger, turmeric powder, garam masala powder, grated coconut, salt, sugar, raisins, sesame and oil and mix well.
In this masala, marinate all roots and vegetables for 15 min.
Stuff masala in brinjal and Rajasthani chilly.
After 15 min. in a microwave safe bowl add marinated vegetable and methi balls add 1 cup water and microwave it for 6 min.
After 6 min. mix the vegetables and again hot water and microwave it for 6 min
In 20 min. undhiyu will be ready in microwave
When undhiyu is ready mix lemon juice and banana and serve with it.
