Ingredients Serving: 2

  1. Mixed Grams Khichdi:
  2. Brown Rice 1/2 cup (Soaked for 20 minutes)
  3. Mixed dal 1/2 cup (moong, arhar, split red masoor, green split gram)
  4. Green peas 1-2 tablespoons
  5. Grated ginger 1 teaspoon
  6. Cumin seeds 1 teaspoon
  7. Pure ghee 2 teaspoons
  8. Turmeric powder 1/4 teaspoon
  9. Salt to taste
  10. Water 2-3 cups (as per the consistency required)
  11. Beetroot Poriyal:
  12. Beetroot 2 cups (grated)
  13. English Carrots 1 cup (grated)
  14. Curry leaves a few
  15. Mustard seeds 1 teaspoon
  16. Split Urad Dal 1/2 teaspoon
  17. Mustard Oil 2 teaspoons
  18. Heeng/Asafoetida a pinch
  19. Chopped Green chilies 1-2
  20. Hung Curd 2 tablespoons

Instructions

  1. Khichdi:
  2. Heat ghee in a pan and add in cumin seeds, let it splutter.
  3. Add in ginger & turmeric powder together and sauté for a few seconds.
  4. Now add in soaked rice & grams and sauté for 2-3 minutes.
  5. Add in water and bring it to a boil.
  6. Lower the heat and cook it covered until done.
  7. Make sure not to burn, so add water if it appears too dry.
  8. Beetroot & Carrot Poriyal:
  9. In the meantime, while Khichdi is being cooked; heat oil in a non stick Kadhai or pan.
  10. Add mustard seeds, once spluttering add in urad dal and asafoetida.
  11. Just when urad dal changes it's colour, add green chilies and curry leaves.
  12. Sauté for a few seconds, add in grated beetroot & grated carrots.
  13. Add salt and cook it covered until the whole mixture turns tender.
  14. Keep stirring to avoid burning.
  15. Beetroot poriyal is ready to serve.
  16. Assembling:
  17. Once Poriyal is done, add this to a desired mould (preferably silicon) and let it set for 10 minutes.
  18. Once set scoop out some of it and fill this gap with hung curd. This will give a beautiful look when you cut through it while eating.
  19. Garnish it with few boiled peas on top.
  20. Follow the same procedure for Khichdi if you wish to serve your platter aesthetically.
  21. Garnish it with few curry leaves and a clove.
  22. Serve it with garlic papad.
