ABOUT Chicken Qorma RECIPE

This is my one of the best recipes that has a rich and thick aromatic gravy which gives a new dimension to this dish. I have used fried onion paste, almonds, coconut, poppy seeds and chironji, paste to add a nutty flavour.

Ingredients Serving: 4

  1. Chicken boneless 500 gms
  2. Hung curd 50g
  3. Ginger paste 1 tbsp
  4. Garlic paste 1 tbsp
  5. Crushed fried onions 2 tbsp
  6. Fried onion paste 4 tbsp
  7. Thick curd 1/2 cup
  8. Desi ghee 3 tbsp
  9. Black cardamoms 2
  10. Green cardamoms 5-6
  11. Bay leaf 2
  12. Clove 4
  13. Cinnamon stick 1
  14. Dry coconut 1 tbsp
  15. Black pepper whole 8
  16. Poppy seeds 1 tbsp
  17. Cashew nuts 15
  18. Almonds 15
  19. Red chilli powder 1 tsp
  20. Coriander powder 1 tsp
  21. Salt to taste
  22. Garamond masala 1 tsp
  23. Saffron soaked in milk
  24. Rose water and Kewra few drops
  25. Chopped coriander for garnishing

Instructions

  1. Marinate the chicken with 2 tsp lemon juice,ginger paste,garlic paste and beaten hung curd. Keep it in the fridge for 4-5 hrs. Also soak the almonds in warm water for 2-3 hrs. Put ghee in a heavy bottom pan. Add sabut masala and stir.
  2. Take a cooking pan, add in the marinated chicken along with the onion paste and all the marination ingredients and cook. In a separate pan, dry roast the coconut, chironji, poppy seeds and cashew nuts. Remove and cool.
  3. Grind these along with almonds and half the fried onions, little water into a smooth paste. Add this paste to the chicken. Keep stirring all the while. Put in red chilli powder, coriander powder, salt and garam masala and cardamom powder.
  4. Stir well. Add in the crushed onions and saffron milk. Let it cook till its done. Sprinkle in rose water and kewra.
  5. Remove and garnish with chopped coriander leaves and 2 slit green chillies.
  6. Serve hot with naan or varki paratha.
