This Asian inspired Easy, Quick and Rainbow salad made with Rice Vermicelli & colourful garden veggies is a complete meal to satisfy your tastebuds at anytime of the day.Be it for a quick lunch or mid day snack.It can be prepared in minutes and your tastebuds will thank you for this gastronomic treat.Who says Clean eating is Boring?? Here we are serving this beautiful salad with a mind-blowing tasty dressing. :)) Enjoy !!

Ingredients Serving: 2

  1. rice vermicelli 100 gms
  2. purple cabbage , red & yellow capsicum, japanese cucumber thinly slices as shown in the picture.
  3. roasted peanuts, chopped spring onions, lemon wedges & fresh mint leaves for garnishing/topping.
  4. For making Dressing - Mix all the below listed ingredients and keep aside for flavours to be infused.
  5. Soy Sauce- 3 tbsp
  6. Sri racha sauce - 1-2 tbsp (as per your preference for spicy)
  7. 1 tbsp brown sugar/Honey
  8. 1 tbsp roasted Sesame seeds
  9. juice of 1 lemon/ rice vinegar-1 tbsp
  10. 1 tbsp toasted sesame oil /any oil of your choice.
  11. .1 finely chopped garlic (optional)

Instructions

  1. Cook Rice vermicelli , soaked in water for about 5 mins in a microwave compatible bowl with a lid on.
  2. I used 900w microwave on full power an it took me 5 mins to cook the vermicelli .let them soak in hot water for additional 5-10 mins more if not cooked fully.
  3. let vermicelli cool till you can handle it comfortably.I prefer to run it through tap water to prevent over cooking.
  4. Take a wide bowl and toss garden veggies with vermicelli + 1-2 tbsp or more dressing (amount as per your preference) and mix well.
  5. Serve in plates and topped it with lots of roasted Peanuts :)) & fresh mint leaves.Serve with a lemon wedge & enjoy !!
