Ingredients Serving: 4

  1. 250 gms White Channa /White chickpeas
  2. 2 med size onions finely chopped
  3. 1 adrak (ginger ) cut in long slices"
  4. 100 gm imli ( tamarind )soaked in cup of hot water
  5. 1 Tejpata ( bay leaf )
  6. 2 laung (cloves )
  7. 2 moti elaichi (black cardamom)
  8. 1 dalchini (cinnamon )
  9. 4 green chillies
  10. 1 tsp amchoor powder ( dry mango powder )
  11. 1/2 tsp Chat masala
  12. 1 tea bag
  13. 3 tbsp oil
  14. Pinch of baking soda
  15. Salt to taste

Instructions

  1. Rinse and Soak the chana overnight in enough water as the chanas soak the water and increase in size.
  2. Next morning rinse and remove the chanas from soaked water
  3. In the pressure cooker , add 4 cups of water , tea bag ,salt to taste and chanas. Give 3 whistles
  4. When cool , remove the tea bag.
  5. In a frying pan , add oil and all spices. Fry for 5-10 seconds. Add onions. Fry till golden brown.
  6. Add chanas to the frying pan with spices
  7. Add imli water ( by running the imli through the sieve )
  8. Cook for a few minutes.
  9. Garnish with green chillies and onions cut in round rings to which lemon juice , salt and red chillie powder have been added.
