ABOUT LAHORI PANEER KOFTE RECIPE

Lahore is a city of Pakistan. It has a rich food culture inspired from Mughal cuisine and well famous in India also. Lahore kofta has some of the simple ingredients yet has a rich, sweet and tangy taste.

Ingredients Serving: 0

  1. Paneer - 250 gm
  2. Dried coconut powder - 2 tbsp
  3. Chopped cashew nuts - 1 tbsp
  4. 10 Raisins (kishmish)
  5. Maida or corn flour - 2 tbsp
  6. Salt to taste
  7. Black Pepper to taste
  8. Oil for frying
  9. Ginger Paste - 2 teaspoon
  10. Tomato paste - 1 cup
  11. Cashew nut paste - 2 teaspoon
  12. Sugar - 1 teaspoon
  13. Rose water - few drops
  14. Garam masala - 1 teaspoon
  15. Fresh coriander for garnishing
  16. Fresh cream for garnishing

Instructions

  1. To make kofta, grate paneer in a bowl,add dried coconut powder, raisins, chopped cashew nuts and salt - black pepper to taste & mix well.
  2. Make round balls out of paneer mixture in the shape of kofta and coat balls with little Maida or corn flour.
  3. Heat oil in a heavy bottomed kadhai on a medium flame. When oil is sufficiently hot, fry koftas in oil. When it gets golden brown from both sides take it out of oil & drain excess oil with the help of tissue paper.
  4. For gravy heat oil in a pan, add ginger and cashew nut paste, cook for few seconds. Add tomato paste and sauté it till it starts to leave oil from sides. Add salt to taste & sugar. Add few drops of rose water .
  5. Add fried koftas in a gravy and mix gently. Simmer for 1-2 minutes.
  6. Take off the heat and transfer in a serving bowl. Sprinkle some garam masala on the top and garnish it with fresh coriander and cream. Serve hot with roti or Puri or pulao.
