ABOUT Pork Curry RECIPE

This delicious pork curry is simmered and cooked to perfection, it is succulent and packed with flavours.

Ingredients Serving: 3

  1. 500 kg pork
  2. 1 teaspoon red chilli powder
  3. 1/4 teaspoon turmeric powder
  4. 1/4 teaspoon mustard seeds
  5. 1 tablespoon spice powder mixture (see below)
  6. 1 tablespoon paste (see below)
  7. 125 ml pork stock
  8. 1 liter water
  9. 1 teaspoon oil
  10. Salt according to taste
  11. Paste ingredients:
  12. 4 green chillies slit
  13. 6 cloves
  14. 1/2 inch piece ginger
  15. 10 curry leaves
  16. 2 small onions quartered
  17. 1/2 teaspoon oil
  18. Handful of coriander leaves
  19. Spice Powder mixture Ingredients:
  20. 1/2 teaspoon cumin seeds
  21. 1/2 teaspoon coriander seeds
  22. 1 teaspoon fenugreek seeds
  23. 1 teaspoon pepper

Instructions

  1. Take a pot, put in the pork along with water and salt. Let it simmer and cook for 40 minutes.
  2. Take a pan, put in the powder mixture ingredients and roast till it changes color. Once they are roasted, grind this mixture and use it as a masala. Keep aside.
  3. In the same pan, add in the cloves, curry leaves, onions, ginger and green chillies together. Stir this mixture well. Let it cook till the onions turn brown in color.
  4. Once cooked, add the handful of coriander leaves and oil together. Mix well then remove from stove.
  5. Grind these ingredients to form a paste and keep aside.
  6. In a kadhai/pan, pour in oil, once the oil is hot put in the mustard seeds and paste. Stir well.
  7. Once fried, add in the steamed pork, along with turmeric and red chilli powder, powder mixture and salt to taste. Mix it well and fry for 4-5 minutes.
  8. Next, pour in the water along with the pork stock. Cover the pan and cook it till the pork is nice and tender.
  9. Serve piping hot with steamed rice.
