ABOUT Banana stem salad RECIPE

In south India food is served on a banana leaf, the raw fruit is cooked as a vegetable and the ripe one had as a fruit, the flower too makes a delicious side dish. Now we are left with just the stem and the root and believe it or not the stem can be made into a juicy fresh salad. So except for the root we use all parts of the banana plant. The stem is just water and fiber and is very good not just for weight loss but reduces the chances of bladder stones.

Ingredients Serving: 4

  1. Banana stem - 6 inches long
  2. Green Chillies - 2
  3. Lemon - 1
  4. Mustard seeds - 1 tsp
  5. Black gram ( split and without skin) ( Urad Dhuli) - 2 tsp
  6. Oil - 1/2 tsp
  7. Salt - to taste

Instructions

  1. The banana stem has a couple of outer layers which have a honeycomb like structure when you look at the cut edges. Remove these till you reach the core which is solid and smooth.
  2. From one edge cut out thin circles. After cutting the first slice you'll see some fiber on the cut surface of the stem. Run your fingers on the cut surface and remove the fiber. Do this after every slice is cut.
  3. Finely dice the circles.
  4. Finely chop the green chillies and add it to the diced banana stem.
  5. In a small pan heat the oil and add mustard seeds.
  6. Once the mustard seeds have spluttered add the split black gram (urad dhuli) and let it turn golden brown.
  7. Add this to the salad along with salt and juice of one lemon.
  8. Mix well and serve immediately.
