Dal-Palak Vada

Ingredients to make Dal-Palak Vada

  • 1 Cup Split Bengal Gram (Channa dal)
  • 1 cup spinach
  • 2 green chillies
  • 1
  • 1/2 tsp cumin seeds
  • 1/4 tsp garam masala powder
  • 1 small onion (finely chopped)
  • 1/4 cup coriander leaves
  • 1/2 tsp Chili pd (to taste)
  • 1/4 Tsp asafoetida
  • 1 tbsp chick pea flour
  • salt to taste
  • oil for frying
  • 1 tsp chaat masala

How to make Dal-Palak Vada

  1. Wash and soak channa dal for 4 hrs.
  2. Clean and wash spinach and coriander leaves, ginger and green chilies.
  3. Finely chop the onion.
  4. In a food processor add the soaked dal, cumin seed, ginger and green chilies and blitz till you get a very coarsely ground dal. You may add about 1/4 cup of water... a little at a time.
  5. Now add in the spinach and coriander leaves and blitz again till the leaves are finely minced too. Remove to a bowl.
  6. To the ground dal, add in the finely chopped onions, salt, chili pd, garam masala pd, asafoetida and chick pea flour. Mix well.
  7. Check the mix for seasoning and adjust. This mix should be fairly thick and you will be able to shape the batter into small patties. (If you have added excess water while grinding, you may have to add another tbsp of chickpea flour.)
  8. Heat oil in a Kadai and drop the shaped patties into the hot oil, cooking them on medium heat till the vadas are nicely golden brown in color.
  9. Drain on an absorbent paper and sprinkle with some chaat masala.
  10. Serve with a dipping sauce of your choice (green chutney / sweet tamarind chutney / ketchup / chili sauce)

My Tip:

- These bite sized vadas are crunchy outside with a soft center. But care must be taken to fry them on medium flame only, else they will be uncooked from the center. - Food processor works best for this recipe as the ingredients are ground coarse and do not become pasty. If using a mixer.. take care to use the pulse option on the mixer only. - You can replace the spinach in the vada with Fenugreek Leaves, Carrots, Spring Onions or other vegetables of your choice.
