Ingredients Serving: 3

  1. Sooji/rava 1 cup
  2. Sugar 2 cups
  3. Saffron 5 strands
  4. Water 2 cups
  5. Cashew 6
  6. Raisins 6
  7. Ghee 4 tblsps

Instructions

  1. In a kadai, add a lil ghee and roast cashew and raisins and keep aside and roast sooji/rava, if the same is unroasted. Keep aside.
  2. In the same kadai, add water and bring it to boil.
  3. Add the sooji/rava to the boiling water and keep stirring to avoid lumps on a medium flame. Close the lid till the sooji/rava gets cooked
  4. Once the sooji is cooked, add sugar and keep stirring.
  5. Once the sugar melts add saffron strands and add ghee little by little and keep stirring.
  6. You can know that the kesari is done when the kesari stops sticking to the sides of the pan. You can adjust the quantity of ghee according to your preference.
  7. Once it stops sticking to the pan, turn off the flame and add roasted cashews and raisins.
