Ingredients Serving: 2

  1. Spring onion - 1 bunch
  2. Coconut scrapings - 3 tbsp
  3. Oil (recommend using coconut oil if possible) - 2 tbsp
  4. Mustard seeds/sarson/soriso/kaduku - 1/2 tsp
  5. Black gram or lentil /urad dal/uzunnu parippu - 1/2 tsp
  6. Fenugrek /methi seeds - 1/4 tsp
  7. Green chilly/hari mirch/pacha mulagu - 1
  8. Onion - 1
  9. Garlic pods - 3
  10. Turmeric powder - 1/4 tsp
  11. Red chilly powder - 1/2 tsp
  12. Salt to taste

Instructions

  1. Chop the onion finely, slit the green chillies, chop the spring onions, crush the garlic pods.
  2. Heat oil in a pan, add in the mustard seeds and let them pop up. Once it’s done add in the black lentils, fenugreek seeds. Sauté them for a minute.
  3. Now add in the green chilly& the crushed garlic pods slits. Sauté them too for a second.
  4. Add the finely chopped onions along with the spice powders and salt. Give them a good mix.
  5. Once the onions turns soft, add in the chopped spring onions. Mix them well. Cover & cook for few minutes.
  6. Once done do a taste test and adjust the spices. Our spring onion thoran is ready to serve.
  7. Serve it along with steamed rice or rotis .
