Whole Wheat Noodles stir fried with assorted vegetables that any kid can't resist

Ingredients Serving: 2

  1. 2 cups whole wheat noodles
  2. 6 cups water
  3. 1 small onion, thinly sliced
  4. 1 cup assorted vegetables like cabbage, capsicum, carrots, chopped
  5. 1-2 cloves, garlic
  6. 1 tablespoon spring onion leaves, chopped
  7. Salt to taste
  8. 1/4 teaspoon black pepper powder
  9. 1/2 Teaspoon Red Chilli Sauce
  10. 1/2 teaspoon tomato ketchup
  11. 1/2 teaspoon green chilli sauce
  12. 1/4 teaspoon vinegar

Instructions

  1. Boil the noodles in 6 cups of water for 6-8 minutes on full flame.
  2. Add black pepper powder while boiling.
  3. When done, strain and wash twice with ice cold water.
  4. Apply about 1 tablespoon of oil to the noodles so that they do not stick together.
  5. In a non-stick pan, add 1 tablespoon oil and heat on full flame.
  6. Toss in the onion and cook for 1 minute, with continuous stirring.
  7. Add in the garlic and let it turn bit brown.
  8. Add in the vegetables like cabbage, capsicum and carrot and stir fry for 2 minutes only so that they remain crunchy.
  9. Add in all the sauces ,salt , vinegar and adjust seasoning as per taste.
  10. Toss in the noodles and stir fry for 1-2 minutes.
  11. Garnish with spring onions.
  12. Serve hot.
