Ingredients to make Chocolate eclairs

  • For pastry dough
  • 1 Cup water
  • 1/2 Cup butter
  • 2 tbsp Brown sugar
  • 1/4 tsp salt
  • 1 cup flour
  • 3 eggs
  • 1/2 tsp vanilla esssence
  • For whipped cream filling
  • 1/2 cup heavy whipping cream
  • 1 tbsp icing sugar
  • 1/4 tsp Vanilla essence
  • For Chocolate Ganache
  • 1/2 cup Heavy cream
  • 1/2 cup dark chocolate
  • Colorful sprinkles( for topping)

How to make Chocolate eclairs

  1. Preheat oven at 200 degree C.line a parchment paper on baking tray and keep aside.
  2. In a pan, add water, sugar, butter, salt and and heat on medium flame till butter melts and mixture starts to simmer.
  3. Add the flour and whisk it nicely to avoid any lumps.heat on low flame till the dough leaves the sides of the pan and comes together as a lump. In another bowl combine eggs and vanilla.
  4. Let the dough cool sightly then start adding egg mix slowly, stir and mash, breaking up the dough until loosened. Stir well.
  5. Transfer the dough to a piping bag with plain nozzle.
  6. Pipe out thick eclairs on the parchment paper. Brush them with little water, to create steam in the can also place a tray filled with water in the oven, under the baking tray.
  7. Bake at 200 degree for 15 mins n then at 160 degree for 10-15 mins till golden brown and puffed up. Take out and cut them open and bake for another 5 mins to cook the centre well.
  8. For the whipped cream, mix all ingredients and whip till soft peaks. For ganache, pour hot cream on dark chocolate, cover for a min then mix nicely till all chocolate melts. For the assembly, you can pipe in the whipped cream in the eclairs or can spoon it in.
  9. Pour some chocolate ganache on top. Top with colourful sprinkles, and serve.
