Vegetable Pancake is a full pack of vegetables, milk and egg in tasty way. My son love this dish any time as a snack.

Ingredients Serving: 3

  1. 1 cup all purpose flour
  2. 1 egg
  3. 1 cup milk
  4. 1/2 cup boiled mashed potato
  5. 1/8 cup chopped onions
  6. 1/2 cup frozen peas
  7. 1/8 cup grated carrot
  8. 1/8 cup chopped tomato
  9. 2 tsp baking powder
  10. 2 tbsp vegetable oil
  11. 1 tsp black pepper powder
  12. 1 tbsp water
  13. Salt for seasoning
  14. Cooking spray

Instructions

  1. In a large bowl whisk all ingredients nicely.(do not over mix)
  2. Heat a skillet and spray some vegetable oil, wipe it with a paper towel.
  3. Pour 2 /3 tbsp of batter on to skillet and spread it in round shape.
  4. Cook until the surface of pancake have some bubbles then flip carefully and cook another side for 2 minutes or until light browned nicely.
  5. Transfer it in a serving plate and enjoy.
