ABOUT Qabooli RECIPE

This rice dish i made from the Chef Sanjeev kapoor 's "Tasty eating for healthy living" volume four . This delicious dish gets its name from the word qabooli which means acceptance. I am uploading my version of this protein rich recipe with a hope of getting acceptance in this competition.

Ingredients Serving: 4

  1. 1 1/4 cups rice
  2. 1/2cup split Bengal gram
  3. 4-5 Green Cardamoms
  4. 1" cinamon sticks 2
  5. 4-5 cloves
  6. 1/2tsp turmeric powder
  7. 1pinch of saffron
  8. 2tbsp skimmed milk
  9. 1tbsp rice bran oil
  10. 1/2tsp caraway seeds
  11. 1/2tbsp Ginger garlic paste
  12. 2-3 green chillies,chopped
  13. 5 onions ,sliced and sauteed till brown
  14. 1tsp garam masala powder
  15. 1tbsp chopped fresh coriander
  16. 1/2 cup skimmed milk yogurt
  17. A few sprigs fresh mint,torn
  18. 2tbsp lemon juice
  19. 4-5 meethi neem leaves
  20. Salt to taste

Instructions

  1. Soak the rice and Bengal grams for half an hour separately in different pans.
  2. Boil in three cups of water with salt and half of the green cardamoms and cloves till almost done and then drain.
  3. Boil Bengal grams in one cup of water with salt and half of the turmeric powder till just cooked.
  4. Soak saffron in milk and set aside.
  5. Heat oil in a non stick pan ,add cardamoms,cinamon and cloves and saute till fragrant.
  6. Add caraway seeds and when they splutter,and the ginger-garlic paste and saute.
  7. Add the green chillies and a little of the sauteed onions.
  8. Add the cooked Bengal grams,garam masala powder,fresh coriander and stir well.
  9. Add remaining turmeric powder,stir and remove from heat.
  10. Add yogurt to this Bengal grams mixture and mix well
  11. Transfer half mixture to a separate pan and spread half of the rice over the Bengal gram mixture; sprinkle half of the remaining sauteed onions,fresh mint,lemon juice and lemon flavoured milk.
  12. Spread the remaining Bengal gram over the rice followed by another layer of rice , sauteed onions,garam masala,fresh mint,lemon juice and saffron flavored milk.
  13. Cover the pan tightly and cook on dum for 25minutes and serve hot.
