Aloo Palak Pies with the goodness of cottage cheese

Ingredients Serving: 4

  1. For the Covering:
  2. Wholewheat flour 1 cup
  3. Salt 1/2 tsp
  4. Beaten Egg 1/2
  5. Chilled butter 2 tbsp
  6. Cold milk 3 tbsp
  7. For the filling:
  8. Cooked potato (slightly mashed)1
  9. Palak a bunch
  10. Onion (finely chopped) 1/2
  11. Green chilies 2
  12. Grated Paneer (cottage cheese) 1/2 cup
  13. Beaten egg 1
  14. Salt as reuired
  15. Pepper 1/2 tsp
  16. Grated Nutmeg a pinch (optional)
  17. For the topping (optional):
  18. Beaten Egg 1/2
  19. Water 1 tbsp
  20. White sesame seeds 2 tbsp
  21. Grated cheddar cheese 2 tbsp

Instructions

  1. Take flour in a bowl and add salt and mix it.
  2. Add in the chilled butter and rub nicely with clean fingers, to resemble bread crumbs.
  3. Now add half of a beaten egg and milk as required so that the mixture comes together.
  4. Knead to form a dough and refrigerate for half an hour.
  5. In the meantime, prepare the filling. Take the slightly mashed potato in a bowl.
  6. Blanch the palak leaves by boiling in water for 2-3 minutes. Then drain off and squeeze out the excess water.
  7. Add this palak to potato.
  8. Now mix in the grated paneer, onion, chilies, salt, pepper and nutmeg. Mix well.
  9. Next add in the egg and mix again.
  10. Take the dough out of refrigerator and roll out to about 0.2 cm thickness.
  11. Cut out circles using a cookie cutter or a small bowl with sharp edges.
  12. Place 2-3 tsp (based on the size of your circle) of filling in the middle of the circle shaped dough.
  13. Press the edges and seal them.
  14. Preheat the oven to 180 degree centigrade.
  15. Now apply egg wash with a folded tissue or brush on top of the pies.
  16. Sprinkle white sesame seeds on top.
  17. Bake for 30 minutes until the pies turn golden brown.
  18. Grate cheddar cheese on top of pies 2 minutes before they are taken out of the oven.
  19. Serve hot with sauce.
