ABOUT Sweet Bananas in Scrambled Eggs RECIPE

This is one of the favorites at my home. Whether to be packed for snack tiffin, or to be served as snack after school hours, this dish is a perfect choice. It gives a feeling of fullness and also the required energy. It is sweet, delicious and yummy. The caramelized banana slices are stir fried with sweet and scrambled eggs, and dry fruits. Serve this tasty snack to your little ones, and give them another chance to love you more :)

Ingredients Serving: 2

  1. Plantain bananas 2
  2. Eggs 2
  3. Sugar 2 tbsp
  4. Ghee 2 Tbsp
  5. vegetable oil 2 tbsp
  6. Cashew nuts or almonds 2 tbsp (chopped)
  7. Raisins 1 tbsp
  8. Crushed cardamom 1

Instructions

  1. Cut the bananas into small pieces and keep it aside.
  2. Heat ghee in a pan.
  3. Fry the almonds/ cashew nuts and raisins.
  4. Remove from flame and keep it aside.
  5. Next, to the same pan, add the oil.
  6. Fry the plantain pieces until they turn light brown in color. Stir in between.
  7. Once done, remove from pan and keep it aside.
  8. To the same pan, add the eggs, sugar and cardamom.
  9. Mix and scramble the eggs for 1-2 minutes.
  10. Once it is cooked, add in the fried bananas and dry fruits.
  11. Mix well and cook for 1 more minute and switch the flame off.
  12. Allow to cool a bit.
  13. Delicious snack is ready to be served.
