ABOUT Sesame Peanut Noodles RECIPE

This is a delicious and very healthy noodle salad where the dressing ingredients are mixed and poured over freshly prepared egg noodles. You can also use plain noodles and add small chunks of boiled chicken over the noodles. Kids love this salad! Adapted from Nigella's recipe with minor variations to suit Indian conditions.

Ingredients Serving: 4

  1. For the salad ingredients :
  2. 1/2 cup bean sprouts - sautéed in 1 tsp oil
  3. 1 red capsicum chopped thinly - sautéed in 1 tsp oil
  4. 2 spring onions (green onions) - chopped finely
  5. 2 cups boiled egg noodles/plain noodles
  6. 2 tbsp roasted sesame seeds
  7. For the dressing :
  8. 1 tbsp Sesame Oil - Chinese/Indian
  9. 1 tbsp cooking Oil
  10. 1 tbsp soy sauce
  11. 1 tbsp green chilli sauce
  12. 1 tbsp Red chilli sauce
  13. 1/4 cup peanut butter - the smooth variety
  14. 2 tbsp White Vinegar

Instructions

  1. Mix all ingredients for the dressing in a bowl till amalgamated.
  2. Mix all the salad ingredients in a large bowl except the sesame seeds. Reserve 2 tbsp chopped spring onions for garnishing. Pour over dressing and toss to mix. Ensure the noodles are evenly coated with the dressing.
  3. Divide evenly into 4 portions and serve in individual bowls topped with the reserved spring onion and sesame seeds.
  4. Serve with fresh juice! I served it with freshly extracted Watermelon Juice!
