ABOUT Kerala Egg Puffs RECIPE

Introducing a delicious and crunchy bakery snack for kids after school. The goodness of boiled eggs is wrapped in puff pastry sheet, baked to perfection and served with a cup of tea or warm milk.

Ingredients Serving: 4

  1. 4 low fat puff pastry squares
  2. For the filling:
  3. 2 eggs, hard boiled and cut into half
  4. 1 onion, chopped finely
  5. 1 teaspoon ginger garlic paste
  6. Curry leaves a few, chopped roughly
  7. 1/4 teaspoon turmeric powder
  8. 1/2 teaspoon red chilli powder
  9. 1/2 teaspoon pepper powder
  10. 1/2 teaspoon garam masala powder
  11. 1/2 teaspoon meat masala powder
  12. 1 and half teaspoons tomato ketchup
  13. Salt to taste
  14. 1 tablespoon oil
  15. For egg wash:
  16. 1 egg white, beaten

Instructions

  1. Thaw the puff pastry squares according to the package instructions.
  2. To make the filling:
  3. Heat oil in a pan at medium heat and add chopped onions. Saute for few seconds. Add in ginger garlic paste, curry leaves and salt. Continue to saute till the onions are translucent.
  4. Bring down the flame and add turmeric powder, red chilli powder, pepper powder, garam masala and meat masala powder. Saute for few seconds until the raw smell of masala disappears. Add in tomato ketchup. Combine well.
  5. Add the egg halves and mix gently. Switch the flame off. Allow the mixture to cool.
  6. Take a spoon full of the mixture and place it in the centre of the puff pastry square followed by one egg half.
  7. To seal the pastry square pull the corners diagonally to the centre and gently press down the edges. Repeat the process with the remaining pastry squares.
  8. For baking:
  9. Preheat the oven to 200 degrees centigrade.
  10. Brush the top of each puff pastry with the egg wash.
  11. Arrange the puff pastry squares in a greased baking sheet and bake for 20-25 minutes or until the top becomes golden in colour and crispy.
  12. Serve warm with a cup of cardamom tea.
