Ingredients Serving: 2

  1. Coriander Leaves - 1/2 Cup
  2. Mint leaves - 1/2 Cup
  3. Basil Leaves - 1 Cup
  4. Parmesan cheese depending upon choice
  5. olive oil - 1/2 cup
  6. Walnuts - 1/4 cup roughly chopped
  7. Green Chillies - 1/2
  8. Salt To Taste
  9. Freshly ground black pepper
  10. Milk put Gradually as per consistency needed
  11. Boiled Spaghetti - 1 pack
  12. Cherry tomatoes Halved - Handful
  13. Red - Yellow Bell Peppers - Handful
  14. Garlic Paste - 1 to 2 tbsp
  15. Oregano - 2 tsp

Instructions

  1. Coarsely grind the coriander, basil leaves, garlic, mint leaves and green chili with Olive oil and make a thick consistency paste. Don't add water or else it will be too runny.
  2. Remove the ready paste in a bowl, add the seasoning, oregano, parmesan cheese and roughly chopped walnuts. Add remaining olive oil to get a good glaze.
  3. Boil the spaghetti till al dente. Half the cherry tomatoes. Chop the bell peppers.
  4. Now, take oil in a pan, add the remaining garlic, add the pesto, the chopped vegetable, walnuts as per requirement, and mix it well together. Add milk to get to semi liquid consistency. Adjust the seasoning. Don't overcook.
  5. The pasta is ready to be served with a French baguette or a loaf.
