Ingredients Serving: 1

  1. Egg whites from 2 eggs
  2. Egg Yolks 4
  3. Salt to taste
  4. Boiled peas 1/2 cup
  5. Boiled sweet potato 1/2 cup
  6. Fresh bread crumbs 1/4 cup
  7. Grated mozzarella cheese 2 tablespoons
  8. Rawa for coating the cutlets
  9. Celery paste 1 teaspoon
  10. Salt to taste
  11. Ginger garlic powder 1 teaspoon
  12. Chaat masala 1/2 teaspoon
  13. OIL FOR BRUSHING

Instructions

  1. Preheat the oven at 180 degrees.
  2. In a mixing bowl, mash together boiled sweet potato and peas lump free.
  3. Add in rest of the ingredients except rawa and mix it well.
  4. It should form a dough. Make small balls and flatten them.
  5. Roll these flat cutlets in rawa and brush it lightly with oil.
  6. Now bake them in preheated oven for 15 minutes.
  7. Heat the non stick flat bottomed pan for omelettes.
  8. Make 2 omelettes with egg whites and yolks separately without oil or butter.
  9. No need to fry the omelettes, we do not need browning on the surface.
  10. Make sure to cook it only from one side, once cooked completely then transfer to a plate.
  11. Now cut both the omelettes strips evenly. While arranging the white and yellow sides should face downward.
  12. In a tray spread the cling wrap and arrange these strips in checkered form.
  13. The white and yellow strips colour forms a beautiful checkered base.
  14. Place the baked croquette and a drop of tomato sauce.
  15. With the help of cling wrap just wrap the croquette and place it carefully in a serving plate.
  16. This beautiful snack packed with health is a great option to serve kids who don't eat veggies.
