ABOUT Pistachio Cookies RECIPE

Rose flavoured pistachio cookies loaded with butter, an excellent snack with a glass of milk either before or after games for instant energy.

Ingredients Serving: 6

  1. Flour (Maida) - 125g
  2. Powdered sugar - 60g
  3. Baking Powder - 1/4 tsp
  4. Butter - 90g
  5. Pistachio - 40g (Roughly broken pieces)
  6. Milk - 25 - 30 ml
  7. Rose flavour - 1/2 tsp
  8. Salt - a pinch (Omit if using salted butter)
  9. Butter paper - 1

Instructions

  1. Sieve the flour and baking powder together
  2. On a plate or clean kitchen platform cream the butter till light and fluffy. Place the softened butter on the plate and then move your fingers in a circular motion to get the butter fluffy.
  3. Add the powdered sugar little by little and cream it till light and airy.
  4. Add the rose flavour and mix.
  5. Fold in the flour, and pistachio pieces.
  6. Add milk to bind it all together.
  7. Shape it into a round log or a triangular log like Toblerone.
  8. Cover it in butter paper and put it into the freezer. Leave it there for at least an hour.
  9. While the oven is preheating at 160 C, take the log out of the freezer and slice into 1/8 inch thick slices.
  10. Place on a baking tray and bake for 20 minutes.
  11. Serve with a glass of milk.
