Mexican Kebabs

Ingredients to make Mexican Kebabs

  • paneer cubes about 15 to 20
  • Bell peppers red and green 1 each cut into big chunks
  • Baby corn about 5 cut into halves
  • mushrooms about 10
  • onions about 1 to 2 cut into big pieces
  • For the marinade:
  • Cocoa powder 2 tsp
  • Hung curd 3 tbsp
  • red chilli powder 1 tsp
  • black pepper powder 1 tsp
  • garlic crushed 1 to 2 cloves.
  • salt 1 tsp
  • Oregano 1 tsp
  • olive oil 2 tbsp
  • For preparation and serving:
  • Skewers, for grilling
  • Sour cream 1/2 cup
  • Few sprigs of spring onions

How to make Mexican Kebabs

  1. Mix all the ingredients listed under marinade and pop in the refrigerator for 4-5 hours.
  2. Mix all the vegetables and paneer in this marinade and set aside in the refrigerator.
  3. Grill these on a stove top grilling pan or in a microwave whichever is suitable for you. I used a microwave to grill. It took me around 20 mins.
  4. Serve them hot with sour cream and spring onions.

My Tip:

Marination is an important part. It should be allowed to marinade for a minimum of 4 to 5 hours.
