ABOUT Hot and Sour Soup RECIPE

This is from the book 'Chinese Vegetarian Delights' by Kaushi Bhatia, my bible for Chinese cuisine. A very organized and comprehensive book which not only gives you good recipes but also explains terminology used in Chinese cuisine and a little about ingredients used. A beginner's guide to Chinese cuisine. This soup is a favourite with my family.

Ingredients Serving: 4

  1. French beans (diced) - 1/4 cup
  2. Spring onion (with tops ) - 2
  3. Cabbage (shredded) - 1/4 cup (optional)
  4. Carrot (diced) - 1/4 cup
  5. Mushrooms (sliced) - 1/4 cup
  6. Baby corn - 2-3 (optional)
  7. Capsicum (diced) - 1/4 cup
  8. Coriander leaves - 1tbsp
  9. Green Chillies - 2-3
  10. Ginger (grated) - 1tsp
  11. Garlic - 4-5 cloves
  12. Oil - 2 tbsp
  13. Soya Sauce - 1 tbsp
  14. Vinegar - 2 tbsp
  15. Corn flour - 1tbsp
  16. Water - 4 cups
  17. Salt to taste

Instructions

  1. String, wash and dice the French beans.
  2. Peel, wash and dice the carrots.
  3. Wash and shred (cut into thin strips) the cabbage and spring onions.
  4. Wash and slice the mushrooms.
  5. Wash and dice the capsicum and baby corn.
  6. Place the French beans and carrots in a microwave safe bowl add water and microwave on high (100%) for 5-6 mins.
  7. Wash and finely chop the coriander leaves, green chillies and garlic.
  8. Place a heavy bottomed pan on the stove and add oil. When it heats up add the grated ginger and the minced coriander-green chillies- garlic. Saute for a couple of mins.
  9. Add shredded spring onion, cabbage, capsicum, baby corn and mushrooms to this and saute on high for 2-3 mins.
  10. Add the microwaved veggies and the residual water.
  11. Add water, soya sauce and salt. Let in simmer for a few minutes.
  12. In a small bowl take the corn flour and add some cold water to make a smooth paste.
  13. Add this to the simmering soup and stir continuously to avoid any lumps.
  14. Once the soup has thickened take it off the flame.
  15. Add vinegar, mix and serve hot.
