ABOUT Black Pepper Chicken RECIPE

This spicy and peppery chicken recipe is adapted from Reza Mahammad's cookbook Reza's "Indian Spice".He first made his name through his renowned London restaurant,The Star Of India.He is also a familiar face on the UK television screens.He is a regular expert chef on ITV's This Morning.

Ingredients Serving: 5

  1. FOR THE PEPPER MASALA :-
  2. 1 tbsp black peppercorns
  3. 1/4th tsp cardamom seeds
  4. 1/4th tsp whole cloves
  5. 1/4th tsp ground cinnamon
  6. FOR THE CHICKEN :-
  7. 2 tsp grated root ginger
  8. 3 garlic cloves ; crushed
  9. 1/4th tsp turmeric
  10. 2 tbsp cider vinegar
  11. Salt
  12. 1000 gm chicken bone in
  13. 4 tbsp vegetable oil
  14. 1 tsp cumin seeds
  15. 2 Bay Leaves
  16. A cinnamon stick
  17. 4 cloves
  18. 4 green cardamom pods
  19. 3 onions ; finely sliced
  20. 1 tsp black peppercorns
  21. 1 tomato ; finely chopped
  22. 2 tbsp chopped coriander leaves
  23. 2 green chillies ; slit
  24. Fresh cream as desired

Instructions

  1. Make the pepper masala with the ginger , garlic , turmeric , vinegar and salt to taste in a bowl and add the chicken .
  2. Cover and leave to marinate in fridge for two hours .
  3. Heat the oil in a deep pan over medium heat .
  4. Add the cumin seeds , and as soon as they crackle , add the bay leaves cinnamon , cloves , cardamom pods and peppercorns . Add the onions and fry until golden brown. Now add the tomato and continue to cook until thoroughly incorporated into the onion mixture .
  5. Add the marinated chicken and saute for a few minutes to allow the natural juices of the chicken to evaporate . Add just enough water - about 150 ml - to cook the chicken.
  6. Bring to a boil , reduce the heat and braise for about 15 mins uncovered .
  7. When almost cooked , adjust the seasoning with salt and add the coriander .
  8. Finally , add some cream if desired and serve .
