ABOUT French Macaron with white chocolate strawberry ganache filling RECIPE

French Macaron shell recipe is adapted from book "The Big Book of Treats" authored by Pooja Dhingra.

Ingredients Serving: 5

  1. For Macaron Shell :
  2. 50 g icing sugar
  3. 50 gm finely ground almond flour
  4. 35 g egg whites
  5. 30 g caster sugar
  6. 1-2 drops of pink gel color
  7. For white chocolate strawberry ganache filling :
  8. 1/2 cup grated chocolate
  9. 3 tbsp Milk
  10. 1/4 cup strawberry puree
  11. 3 tbsp sugar

Instructions

  1. For Macaron Shell :
  2. Whisk icing sugar and almond flour so that there are no lumps.
  3. Beat egg whites , once they start frothing add caster sugar and beat until it forms stiff peaks
  4. Mix gel color and start adding almond flour and sugar mixture and mix well by cut and fold method
  5. Pipe in small circles on cookie tray on parchment paper and keep aside for 30 mins.
  6. Bake for 10-15 mins at 150 C.
  7. Once done, allow to cool on wire rack.
  8. For white chocolate strawberry ganache filling :
  9. Heat strawberry puree with sugar on low heat until it thickens , once thick switch off flame and allow it to cool
  10. Boil milk and add to grated white chocolate , whisk in until chocolate melts , add strawberry compote to it.
  11. keep in fridge for half an hour so that ganache thickens up.
  12. Assembly :
  13. Pair similar size macaron shells ,and pipe ganache on it and press the shells together.

Amazing. I tried baking macrons but they do not turn well. May be will try this recipe

Lovely garima Ji I tried a lot but don't know what is lacking. I use OTG for baling. Upper rod, lover rod, both rods or convection mode where I should bake them. PL. Let me know
