Ingredients to make Chai muffins

  • 225ml homemade almond milk
  • 2 tea bags
  • 1 tsp ground cinnamon
  • 300 grm plain flour
  • 100 grm whole meal flour
  • 150 grm brown sugar
  • 75 grm almond chopped
  • 2 egg
  • 150 ml sunflower oil
  • 2 and 12 tsp baking powder

How to make Chai muffins

  1. In a tea pan, warm almond milk with 2 teabags and cinnamon.
  2. continue stirring and after 5-8 min switch of gas. leave it to cool down.
  3. Preheat the oven to 200 degree celsius, grease and dust a baking tin.
  4. In a large bowl mix all dry ingredients like flour,baking powder,sugar and chopped almond and mix well.
  5. In other side when milk has cooled, add oil,egg and milk and whisk well.
  6. Now add all dry ingredients into wet ingredients and mix it lightly, with cut and fold method, making sure that there are no lumps of flour.
  7. Now divide the mixture in muffins cups and dish and bake in oven for 20-25 min until fork is out clean and muffins are slightly risen and golden on top.
  8. Remove rack to cool for about 10 minutes before devouring.
  9. when it cool garnish it with powdered sugar and chopped almond over it to.

My Tip:

According to Nigella very important tips that can use skimmed milk in place of almond milk and can use plain and whole meal flour except of white spelt flour,so I use homemade almond milk and take whole meal and plain flour.
