ABOUT Tomato Kurma RECIPE

It is a simple , aromatic tasty kurma recipe that goes well with idly, dosa or idiyappam. i got this recipe from the supplementary book written by Mrs revathy Shanmugam , which comes along with the tamil magazine'Aval Vikatan'.

Ingredients Serving: 3

  1. Tomato 4 big sized
  2. Onion 2
  3. Salt As needed
  4. Turmeric 1 teaspoon
  5. To Grind Masala 1
  6. Ginger 2 inch piece
  7. Garlic 5 cloves
  8. Fennel Seeds 1 teaspoon
  9. Green Chillies 7 to 8
  10. Coriander Leaves & 1 handful
  11. Mint leaves 1 handful
  12. Coriander Powder 1 teaspoon
  13. To Grind Masala 2
  14. Coconut 1/2 cup
  15. Cashew nuts 4 to 5
  16. Fried Gram/ Pottu kadalai 2 teaspoon
  17. To temper:
  18. cinnamon 1 piece
  19. Cloves 2
  20. Cardomom 2(optional)
  21. Biriyani leaves 1(optional)
  22. Curry leaves Few
  23. Oil As needed

Instructions

  1. Cut onions length wise and finely chop the tomatoes.
  2. Grind the masalas separately as given in the ingredient list
  3. Add oil in a heavy bottomed pan and let it heat. Then add the tempering items(given in the ingredient list under to temper), then add onions and curry leaves and saute well.
  4. Then add the ground masala (1)and saute well till raw smell goes.
  5. Add tomatoes and let it cook well.Add salt and 2 cups water and let it boil till tomatoes get mashed and everything combined well.
  6. Then add the ground coconut masala (2) and let it boil for 2 minutes.
  7. Now kurma is ready . Garnish with coriander leaves and serve hot with idly or chapathi or idiyappam/Rice sevai
