ABOUT Dum ki Arbi /Taro roots/Colocasia slow cooked in Yogurt Gravy & Wholesome Indian Spices! RECIPE

Dum Ki Arbi !! Adapted from Sanjeev Kapoor's Khazana of Indian Recipes Cookbook. Here We have served it with homemade whole wheat (no yeast) Butter Naan, Pickled shallots ,green chillies and a wedge of lemon. Enjoy !!

Ingredients Serving: 6

  1. Colocassia / Arbi – 400 gm
  2. Onions – 3 medium
  3. Ginger Garlic paste – 1 tsp
  4. Fresh Yogurt – 1 cup/200 gm approximate
  5. Cumin Seeds-1 tsp
  6. Poppy seeds / Khus Khus – 2 tbsp
  7. Chilli powder – 1-2 tsp (depends upon your preference)
  8. Coriander powder 2-3 tsp
  9. Roasted Cumin powder – 1 tsp
  10. Turmeric powder -1 tsp
  11. Small Green cardamoms – 3
  12. Cloves -3
  13. Salt to taste
  14. Kasoori methi- to garnish -1 tbsp

Instructions

  1. Wash and clean the Taro roots/ Arbi properly under running water and get rid of any mud attached to it.
  2. Dry with a paper towel and keep aside.
  3. Pressure cook cleaned and washed Arbi for 1 whistle and let the pressure release naturally.
  4. This will allow Arbi to cook just nice, not to tender or hard .Peel off skins and pat dry.Cut into about 2 inches pieces.
  5. Take about 2 tbsp of oil in a frying pan and pan fry Arbi/Taro roots till Golden and Crispy.
  6. Remove fried Arbi from the Pan on a paper towel and let excess oil drain, if any.
  7. Take about 1.5 - 2 cups of water and bring it to a boil.Cook chopped medium pieces of Onions, till gets tender.
  8. In a blender Add---boiled Onions + ginger garlic paste + Poppy seeds/khus khus and blend to fine paste.
  9. add all masalas to this paste and mix well.
  10. Take 2 tsp of oil in a Wok/Pan and add Cumin seeds when its hot.Add Cloves and Cardamoms.
  11. Add the Paste with masalas to it and cook till oil gets separated on the sides.
  12. Add yogurt to it and mix well for about 2-3 minutes. Add fried Arbi to this mixture and bring to a boil.
  13. Simmer it on low flame for next 10-15 minutes, till it thickens to desired consistency with very little liquid.At this stage you will see, Oil and fats from yogurt gets separated and forms a beautiful bright Red/Orange colour layer on top.
  14. Garnish with Fresh Kasoori methi and close the lid for next 5 minutes.
  15. Transfer to a serving Dish/Bowl and its ready to be served.
