ABOUT Mutton Do Pyaza RECIPE

Mutton Do Pyaza is a dish prepared on special occasions and more so as it was introduced to me by my mom in law. This dish is mild but full of aromas and flavours, the richness in the gravy comes from the almond paste, yogurt, saffron strands, whole spices and loads of onions. It goes well with both rice and rotis.

Ingredients Serving: 6

  1. Mutton (with bones) - 750 grams
  2. Yogurt - 500 grams
  3. Onions (small sized) - 15
  4. Almonds - 40 (soaked and peeled)
  5. Garlic - 20 cloves
  6. Red chillies - 10 (without seeds)
  7. Black pepper - 15
  8. Cloves - 5
  9. Cardamom - 5
  10. Cinnamon - 2 sticks
  11. Ginger - 2 inch piece
  12. Ghee - 2 tsp
  13. Saffron strands - 2 pinches
  14. Lemon juice - a few drops
  15. Cooking oil - as required
  16. Salt according to taste

Instructions

  1. Slice the onions evenly - neither too thick or thin. Keep aside. Next slice the garlic and ginger into long and thick slices. Keep aside. Make a fine paste of the almonds with a little yogurt. Set aside.
  2. Take a cooker, pour in oil, once heated add in the whole spices (cinnamon, cardamom, black pepper, cloves), 4 chilly pieces and few slices of onion. Stir fry till they they turn into a light golden colour. Do not over fry.
  3. Add in a few ginger garlic pieces, mutton pieces and fry for a few minutes. Also put in salt and half a glass of water. Let this cook for a few whistles till the meat is 80% cooked.
  4. Once pressure releases from the cooker, add the remaining ingredients-onion slices, red chilly pieces, ginger & garlic pieces, saffron strands, yogurt, almond yogurt paste, ghee, lemon juice, few spoons of cooking oil and remaining salt
  5. Cook this for 2 more whistles. Serve hot.
