Melt in the mouth tikkas... makes a wonderful evening snack or starter to a lunch or dinner party. This is from Nita Mehta's book, Tandoori Cooking in the Oven.
Delicious paneer tikkas :)
Cut cottage cheese (paneer) into 1.5" cubes.
Cut capsicum also into similar sized cubes.
Cut one onion into 2 halves and separate the layers. Cut each layer into 2-3 pieces.
Using a hand blender finely mince green chillies, garlic, coriander and mint leaves.
Place the curd in a bowl and add the minced green chillies-garlic-coriander-mint mixture, turmeric powder, garam masala, gram flour and salt. Mix it thoroughly.
Add the paneer cubes, capsicum and onion into this marinade and gently mix to coat the marinade over all the pieces. Cover and let it sit for about half an hour.
In the meantime preheat an oven to 180 C.
While the oven is preheating cut the second onion into rings for garnish.
Arrange pieces of paneer, capsicum and onions on a skewer and grill it in the hot oven over a wire rack for about 10-12 mins or till you see the edges getting lightly charred.
Remove from oven, squeeze some lemon juice and sprinkle some chaat masala. Garnish with onion rings and serve hot.
This will make 2-3 batches of Reshmi Paneer Tikka.
