ABOUT Amso (Chicken Stew With Rice Flour) RECIPE

It is a Naga Cuisine and you will find this dish in all the house of Ao Tribes of Nagaland. It is a signature dish of Ao Naga Tribe of Nagaland. A very healthy and scrumptious dish. It is a zero oil dish and can be eaten as a soup or with steamed rice.

Ingredients Serving: 4

  1. Chicken - 500 gms medium cut
  2. Green Chillies - 4-5 or as per taste
  3. Tomato - 1 chopped (optional)
  4. Ginger - 2 inches
  5. Garlic - 6-7 cloves
  6. Bamboo Shoots - 2 tbsp or as per taste
  7. Rice Flour - 3 tbsp
  8. Salt to taste
  9. Water - 3 cups or as required
  10. Few chopped coriander leaves (optional)

Instructions

  1. Coarsely ground the green chillies and keep aside.
  2. Take the ginger and garlic and coarsely ground them and keep aside.
  3. In a pan add the chicken.
  4. Add water, coarsely grounded green chillies,tomatoes, salt and bring to boil and cook for about 10 mins.
  5. Add coarsely grounded ginger garlic, Bamboo Shoots and cook for another 10 mins. Add water if required and adjust the gravy consistency.
  6. Mix the rice flour in little water and add it to the chicken.
  7. Stir continously so it doesn't form any lumps and cook for 3-5 mins.
  8. The gravy will thicken, check salt, add chopped coriander leaves and take off the heat.
