ABOUT Akki Roti RECIPE

A traditional recipe from karnataka is a made out of Rice flour and grated mix vegetables. It is ideal for those who are going on a gluten free diet.

Ingredients Serving: 1

  1. Rice flour – 1/3 Cup
  2. Grated mix vegetable (Carrot,capsicum,onion,cucumber) - 1/2 cup
  3. Green chili - 1/4 tsp
  4. cumin seeds - 1/4 tsp
  5. Salt to taste
  6. Oil - 2.5 tsp
  7. Water as needed
  8. Bio degradable dried leaf - 1 (to make the roti)

Instructions

  1. Mix Rice flour, 1 tsp of oil ,vegetables and cumin seeds. Add water only if needed.
  2. Make them as a pliable dough. The measurement given is for 1 roti hence you need not split them into multiple balls.
  3. Start making the akki roti by placing the mix on the dried leaf and using your moist hands to make them as a circle roti.
  4. Once the roti is made in the leaf, take a non stick pan and heat the pan. Once hot, add 1 tsp of oil to it.
  5. Take the akki roti together with the biodegradable leaf and put it on the pan and leave for 4 to 5 minutes so that it gets stuck with the pan.
  6. After 4 to 5 minutes the leaf can taken out from the pan.
  7. Flip the akki roti 3 to 4 times. Add 1/2 tsp oil when you are flipping for the first time. After that it is not needed.
  8. After flipping each time close it with a lid so that it gets cooked well.
  9. Serve hot with butter or chutney
