ABOUT Cauliflower Broccoli Herbed Rice RECIPE

Simple but healthy Pulao that is mild in spice with added goodness of vegetables like cauliflower and broccoli. This pulao is perfect for lunchbox or parties because of its exotic taste and look.

Ingredients Serving: 4

  1. 1 cup basmati or long grain rice
  2. 1 head cauliflower florets
  3. 1 head broccoli florets
  4. 2 Onions sliced
  5. 4-5 dry red chilies
  6. 1 tbsp urad dal (skinless black gram)
  7. 1 tsp cumin seeds
  8. 1 tsp onion seeds (kalonji)
  9. 8 cloves garlic minced/grated
  10. 2 tsp mint leaves-green chili paste
  11. 1 BUNCH CORIANDER LEAVES
  12. 1 tbsp crushed/coarsely ground black peppercorns
  13. 1 tbsp oil + 1 tbsp clarified butter (ghee)
  14. Salt to taste
  15. few curry leaves

Instructions

  1. Wash and soak rice for 20 minutes. Drain the water and boil the rice (1 cup: 2 cups water). Add salt to taste to the rice.
  2. Wash florets of cauliflower and broccoli thoroughly.
  3. Heat oil and ghee in a large kadhai/pot. Once smoking hot, add urad dal and fry till lightly browned.
  4. Add dry red chilies, cumin seeds, and kalonji. Sauté. Add curry leaves. Stir fry.
  5. Add onions along with garlic and cook till onions are lightly colored.
  6. Add mint paste and sauté well for a minute.
  7. Add cauliflower and broccoli florets. Mix well. Add little salt. Cover with lid and let cauliflower cook till just soft (should be still firm).
  8. Add rice and combine well with the masala. Cover with lid again and let rice cook in the steam on low heat for 5 minutes additionally. Switch off gas.
  9. Add chopped coriander leaves and toss it well with the rice. Finally sprinkle crushed black peppercorns and stir well.
