ABOUT Kaju Katli RECIPE

Kaju Katli is one of the famous and popular dessert/sweet is traditionally eaten during Diwali time.We all know Kaju means Cashewnut in Hindi. We can make this sweet in different ways. One method is cashew nuts are soaked in water overnight, ground it next day and sugar solution is boiled down to a single thread syrup, and is added to the ground cashews. Some uses ghee, saffron and other dried fruits.

Ingredients Serving: 4

  1. 200gm Cashewnuts
  2. 3/4h cup of sugar
  3. a drop of ghee for grasing your hands

Instructions

  1. Take a Non Stick pan heat the cashewnuts slightly for a few second so that we would get a fine cashew powder. It should not be wet. It should be in room temperature.
  2. Grind it in a blender/mixie with a short intervals by using whipper mode. If you run continuously cashewnuts becomes paste.
  3. Now we got the powdered Cashewnut.
  4. Take 3/4th cup of sugar and melt it in a Non stick wide pan .Add little water.
  5. Heat till the sugar gets dissolved and keep on stirring .
  6. At one particular stage it starts boiling and the syrup will reach one string consistency.
  7. Just check with your thumb and index finger whether th syrup got one thread consistency.
  8. Now pour the powdered cashewnuts and keep the stove in low flame.
  9. Keep doing till it reaches a soft dough like chapathi dough consistency.
  10. Do not heat too much then the dough will become too hard .
  11. Take it out the dough when it was little warm, grease your hands with little ghee and start kneading it into a soft dough.
  12. Spread an Aluminium foil (grased with ghee) and place the dough and cover with a plastic sheet
  13. Start rolling the dough thinly and evenly with a rolling pin.
  14. Using a knife cut them into diamonds shape.Garnish with saffron.
  15. Delicious Kaju katlis are ready to serve now.
