ABOUT Risalamande RECIPE

Risalamande is a traditional Danish dessert . It is a rich rice , heavy cream pudding served with fruit compote.

Ingredients Serving: 2

  1. 1/2 cup rice(soaked for half an hour in water)
  2. 1/2 cup water
  3. 1 cup milk
  4. 1/4 cup sugar
  5. 1/4 cup heavy whipped cream
  6. For Fruit Compote :
  7. 1/2 cup diced strawberries and cranberries
  8. 1/4 cup water
  9. 2 tbsp Sugar

Instructions

  1. Pressure cook rice with water at medium heat ,switch off the flame after one whistle.
  2. In a saucepan add milk and allow it to simmer on slow flame .
  3. Add cooked rice to milk and cook on slow flame , stirring continuously until milk is absorbed in rice and obtains thick consistency.
  4. Allow it to cool .
  5. Once cooled add half of the whipped cream and mix well.
  6. For Strawberry and cranberry compote :
  7. In a saucepan add diced strawberry ,cranberry, sugar , water and cook it on slow flame.
  8. Cook over medium heat for 10 mins, until fruits become soft and mixture becomes thick.
  9. Assembly :
  10. In a glass bowl , firstly set a layer of rice ,heavy cream mixture .Pipe remaining heavy cream over it in a pattern.
  11. Top it with cooled strawberry and cranberry compote.
  12. Serve Chilled
