Ingredients Serving: 4

  1. 2 lb fresh mussels cleaned
  2. 2 tbsp Extra virgin olive oil
  3. 2 garlic cloves(minced)
  4. 1/2 cup white wine
  5. 1 cup chopped parsley
  6. 2 tsp fresh rosemary(chopped)
  7. 5 to 6 grape tomatoes(split length wise)
  8. 1 tsp red cayenne pepper
  9. 1 tsp black pepper powder
  10. Salt for seasoning

Instructions

  1. Heat oil in a heavy bottom dutch pan.Add mince garlic and red pepper black pepper, salt and saute a little bit without browning garlic. Add grape tomatoes saute for a minute. Add mussels mix well then add white wine, and put on lid.
  2. After 3 minutes, give mussels a stir and replace lid and continue cooking until all mussels have opened.
  3. Stir with chopped parsley and rosemary then take out in serving bowls.
