ABOUT Vegetable hot and sour Soup RECIPE

A perfect soother on a rainy cold evening and a great healthy starter for the dining table!

Ingredients Serving: 3

  1. Cabbage shredded - ĵ cup
  2. Bean sprouts - 1/4 cup
  3. Button mushrooms chopped - 2
  4. Green capsicum chopped - 1/2 medium
  5. Carrot grated - 1/2 medium
  6. French beans chopped 4 - 6
  7. Cauliflower grated - 1/2 cup
  8. Onion - 1 chopped
  9. Garlic 2-3 pods chopped
  10. Ginger grated - 1 inch piece
  11. Dark soy sauce - 2 tablespoons
  12. Green chilli sauce - 2 tablespoons
  13. Vegetable stock 4 - 5 cups
  14. Salt to taste
  15. Sugar - ½ teaspoon
  16. White pepper powder - 1/2 teaspoon
  17. Cornflour/corn starch - 3 teaspoons
  18. Vinegar 1 tablespoon
  19. Spring onion greens finely chopped 1 stalk
  20. Oil - 1 tablespoon

Instructions

  1. Heat oil in a deep pan. Add onion, garlic and ginger and sauté for a minute.
  2. Add French beans, carrot, bean sprouts, cabbage, cauliflower & capsicum, mix well.
  3. Add mushrooms and continue to sauté. Add dark soy sauce, green chilli sauce and vegetable stock.
  4. Add salt, sugar and mix. Add white pepper powder and mix. Add cornflour mixed in a little water and cook till the soup thickens slightly.
  5. Add vinegar and stir. Pour into individual soup bowls. Garnish with spring onions.
