Ingredients to make Kushari

  • 1 cup cooked rice
  • 50 gms cooked black masoor dal
  • 50 gms cooked chickpeas
  • 50 gms boiled macaroni
  • 1 cup chopped cilantro
  • 1 medium size onion cut into chunks
  • 2 medium size tomatoes cut into chunks
  • 2 Tbsp olive oil + some more to drizzle
  • 1 tsp Roasted cumin Powder
  • 1 tsp coriander powder
  • 1 tbsp tomato puree
  • 1/2 tsp black pepper powder
  • salt as per taste
  • Few mint leaves to garmish

How to make Kushari

  1. Blend the chopped onion, tomatoes, tomato purée, chopped cilantro, pepper powder and set aside. Set aside 1 Tbsp of that gravy for future use
  2. In a pan heat the olive oil and add the gravy and add the cooked rice, black masoor dal, chickpeas, macaroni and drizzle olive oil and mix well. Add salt and stir once more
  3. Garnish with mint leaves and 1 Tbsp of gravy that was set aside earlier and enjoy hot

My Tip:

Tomato purée added to chopped tomatoes gives a nice flavour
