ABOUT CHIPOTLE BURRITO RICE BOWL RECIPE

Flavourful 30-minutes Burrito rice bowls made with seasoned white rice, braised tofu, pinto beans.Fast, easy, super healthy and delicious.

Ingredients Serving: 4

  1. FOR RICE: 1 Tsp oil
  2. 1 cup white rice
  3. 2 Cups Water
  4. 1 Lime
  5. 2 tbsp freshly chopped coriander
  6. Salt to taste
  7. FOR TOFU: 1 tbsp oil
  8. 2 chipotle peppers, finely chopped
  9. 1 tsp garlic powder
  10. 1 tsp Ground Cumin
  11. 1\2 tsp dried oregano
  12. 1\2 tsp black pepper
  13. 1 cup tofu cubes
  14. FOR TOPPINGS: 1 cup pinto beans
  15. 1 cup frozen charred corn
  16. 1\2 cup lettuce
  17. 1 cup salsa (tomatoes, onion, jalapeno, coriander, lime juice, salt)
  18. 1 cup finely shredded monterey jack \cheddar cheese
  19. 1\2 cup sour cream

Instructions

  1. FOR THE TOFU: combine all the ingredients and marinade for 1 hour.
  2. lightly grill tofu for 4,5 minutes at 400'F.
  3. FOR THE RICE: heat oil, saute white rice and lime juice for 1 minute.
  4. add water and salt. cook till water is absorbed.
  5. Add coriander. Fluff rice with a fork.
  6. TO ASSEMBLE: Arrange equal parts of white rice and tofu. top with pinto beans, corn, salsa, lettuce, cream and cheese and season with salt and pepper.Serve.
