CHIPOTLE BURRITO RICE BOWL

Ingredients to make CHIPOTLE BURRITO RICE BOWL

  • FOR rice: 1 Tsp oil
  • 1 cup white rice
  • 2 Cups water
  • 1 lime
  • 2 tbsp freshly chopped coriander
  • salt to taste
  • FOR TOFU: 1 tbsp oil
  • 2 chipotle peppers, finely chopped
  • 1 tsp garlic powder
  • 1 tsp Ground cumin
  • 1\2 tsp dried oregano
  • 1\2 tsp black pepper
  • 1 cup tofu cubes
  • FOR TOPPINGS: 1 cup pinto beans
  • 1 cup frozen charred corn
  • 1\2 cup lettuce
  • 1 cup salsa (tomatoes, onion, jalapeno, coriander, lime juice, salt)
  • 1 cup finely shredded monterey jack \cheddar cheese
  • 1\2 cup sour cream

How to make CHIPOTLE BURRITO RICE BOWL

  1. FOR THE TOFU: combine all the ingredients and marinade for 1 hour.
  2. lightly grill tofu for 4,5 minutes at 400'F.
  3. FOR THE RICE: heat oil, saute white rice and lime juice for 1 minute.
  4. add water and salt. cook till water is absorbed.
  5. Add coriander. Fluff rice with a fork.
  6. TO ASSEMBLE: Arrange equal parts of white rice and tofu. top with pinto beans, corn, salsa, lettuce, cream and cheese and season with salt and pepper.Serve.
