ABOUT THAI VEGETARIAN PINEAPPLE FRIED RICE RECIPE

Ingredients Serving: 4

  1. 3 cups cooked white rice
  2. 2 tbsp cooking oil
  3. 1 tsp grated garlic
  4. 1 chopped red chili
  5. 2 shallots, finely chopped
  6. 1\2 cup frozen corn
  7. 1 small carrot diced
  8. 1 tomato diced
  9. 1 cup fresh pineapple
  10. 1 cup roasted cashew
  11. 3 strings of spring onion
  12. 1 tbsp sesame oil
  13. 2 tbsp Soy sauce
  14. 1.5 tsp curry powder
  15. Juice of 1 Lime

Instructions

  1. Heat oil in a pan. fry cashew. add garlic and red chili.
  2. Add onion, cook till translucent. stir in carrot, corn and tomato till tender.
  3. Add sesame oil, soy sauce, curry powder and lime juice.
  4. Add pineapple chunks, cashew, spring onion and rice. toss everything well and cook for 2 minutes.
  5. Serve immediately.
