Kabsa is regarded as national dish in gulf . fragrant basmati rice simmered and cooked in aromatic spices and saffron topped with deliciously buttery meat sprinkled with crunchy nuts

Ingredients Serving: 4

  1. Mutton/Chicken 500gms
  2. Onions 2 med sliced
  3. Ginger & garlic paste 1tsp each
  4. Salt to taste
  5. Orange /lemon zest 1tsp
  6. Potatoes 1-2 cut in wedges
  7. Pepper powder 1/2tsp
  8. Cardamom powder 1/2tsp
  9. Cinnamon powder 1/2tsp
  10. Tomato paste 1tbsp
  11. Tomatoes 2 finely chopped
  12. Rice 500gms (soaked in water for 30 min)
  13. Carrots 1-2 shredded
  14. Oil 1 cup
  15. Butter 100gms
  16. 1/4tsp saffron dissolve in little warm milk
  17. To Garnish
  18. 2 med sliced and fried golden (brista)
  19. 2-3hard boiled eggs
  20. Coriander leaves chopped handful

Instructions

  1. Heat a big vessel add oil add onions fry till golden Add ginger garlic paste saut for 2mins Add meat cook till it releases water and colour changes
  2. Add salt,orange /lime zest,pepper powder, cardamom powder, cinnamon powder, tomato paste & chopped tomatoes and cook
  3. When oil floats add 2cups water cover and cook on med flame till meat is half done
  4. Add potatoes cook till meat is almost done and potatoes are cooked
  5. Remove meat in a plate and keep aside
  6. Now take 3 cups of water boil it and add to the masala give a nice stir and add soaked rice and carrot bring to boil and simmer sprinkle saffron milk cover till rice is done(10 min approx ).do give a stir in between
  7. In the mean time heat butter in a pan add boiled meat fry 5-6 pieces at a time likewise fry all pieces if any butter remains add it to rice
  8. For plating
  9. Dish out rice in a serving platter /dish arrange buttery fried meat pieces arrange halved eggs, sprinkle fired onions and generously sprinkle green coriander leaves.serve with raitaor salad and lots of love
