ABOUT Egg less Vanilla Tea Cake RECIPE

A lovely tea time cake that is butter free, low fat,light and moist and has a great texture.

Ingredients Serving: 4

  1. 1 and 1/3 cups all-purpose flour
  2. 3/4-1 cup castor sugar )depending on preference sweetness)
  3. 1 Cup Thick Yogurt
  4. 1 and 1/2 teaspoon baking powder
  5. 1/2 teaspoon baking soda
  6. 1/3 cup Oil
  7. 1 teaspoon vanilla extract / essence
  8. Handful of roasted and chopped nuts of your choice

Instructions

  1. Preheat oven to 200 degrees C. Line, grease and dust one 6 ½ inches round cake pan.
  2. Beat yogurt till smooth in a bowl, add baking powder and soda. Mix well. Keep aside for 3 mins for the mixture to start bubbling.
  3. Add oil, sugar and vanilla essence and mix till uniformly incorporated. Add flour in parts. Mix gently till just combined.
  4. Pour the batter into the prepared pan. Level with a spoon, sprinkle the chopped nuts evenly on top.
  5. Bake at 200 degrees C for 10 minutes. Reduce the temperature to 175 degrees and bake for 40 – 45 mins or till a toothpick inserted in the center comes out clean.
  6. Cool the cake in the tin for 10 minutes. Loosen the edges by running a knife along the sides and remove the cake from the pan.
  7. Cool in the rack. Slice and serve next day.
