Scrambled eggs with the twist of green!

Ingredients Serving: 2

  1. Egg white - of 3 eggs
  2. Milk - 1/4 cup
  3. Finely chopped capsicum - 2 tbsp
  4. Chopped spinach - 2 tbsp (optional)
  5. olive oil - 1 tbsp
  6. Green Chutney - 2 tsp (*See tips)
  7. Crushed black pepper - to taste
  8. turmeric powder - a pinch
  9. salt to taste


  1. In a bowl, whisk together the egg whites, green chutney, turmeric powder, pepper and salt to taste till its fluffy.
  2. Heat oil in a non-stick pan on medium heat. Add milk to the egg mixture and give it a stir.
  3. Pour this into the pan and sprinkle the capsicum and spinach. Quickly stir to scramble up the mixture before it becomes an omelette.
  4. Reduce heat and cover with a lid, cook it for 2-3 minutes. Remove the lid and check if the scramble is quite dry.
  5. Do no overcook it. Stir once more and remove before it becomes too dehydrated.
  6. Serve warm with toast or as desired.
