ABOUT Kale Thoran (Kale Stir Fry with Coconut) RECIPE

Kale is one of the most nutritious plant foods and belongs to the cabbage family. It tastes similar to drumstick leaves. I have used curly kale in this recipe.

Ingredients Serving: 3

  1. 1 bunch kale
  2. 1/2 teaspoon mustard seeds
  3. 2 Whole dry red chillies
  4. a few curry leaves
  5. 1/2 cup grated Coconut
  6. 2 garlic cloves
  7. 1/2 teaspoon cumin seeds
  8. 1/2 teaspoon Turmeric powder
  9. 1/2 teaspoon red chilli powder
  10. 1 tablespoon vegetable oil
  11. Salt to taste

Instructions

  1. Wash kale, break the leaves from the stalk and chop finely.
  2. Coarsely grind grated coconut, garlic cloves and cumin seeds. Transfer to a bowl.
  3. Heat oil in a pan over medium heat. Splutter mustard seeds. When they pop up and sizzle add torn dry red chillies and curry leaves.
  4. Bring the flame down and add chopped kale leaves. Cook uncovered until wilted.
  5. Add the turmeric powder, red chilli powder and salt. Stir well to combine.
  6. Now add the coconut mixture and cover with a lid. Allow to cook on low flame for 3 minutes. You may sprinkle few drops of water if the mixture lacks moisture.
  7. Now open the lid and cook until all water has been absorbed, stirring in between. Switch the flame off.
  8. Serve with rice and other side dishes.
