ABOUT Mah ki Dal / Punjabi Kali Dal RECIPE

This dal is also called Langar ki dal as it is served as Langar in the Gurudwara

Ingredients Serving: 6

  1. 250 gms Sabut Urad dal (whole black lentils )
  2. 200 ml tomato pure in tetra pack
  3. 1 Tejpata ( Bay leaf )
  4. 2 Badi elaichi (black cardamom)
  5. 2 tbsp yogurt - whisked
  6. 1 tsp Garam masala
  7. 1 tbsp Kashmiri lal mirch
  8. Salt to taste
  9. For Tadka ( seasoning for flavouring of dish )
  10. --1 adrak ( ginger ) cut in long sliced
  11. --1 tbsp kasoori methi (dry fenugreek leaves )
  12. --2 tbsp desi ghee or butter

Instructions

  1. Pressure cooker the dal in 1 litre water for 2 whistles
  2. Throw away the water and rinse the dal properly in water
  3. Put the dal back in pressure cooker and add about 1-1.5 " water -- up from bottom of pressure cooker.
  4. To this add tomato purée , Badi elaichi, adrak , Garam masala ,mirch powder , salt to taste and yogurt
  5. Also add Tadka to the above -- make this tadka separately in a frying pan with ghee , adrak and kasoori methi. Add in pressure cooker
  6. When all have been added , cook on medium fire for 10 whistles
  7. On opening the cooker , mash the dal with a spoon so that the consistency is creamy and smooth
  8. Garnish with fresh dhania patta ( coriander leaves ). Add a blob of white or yellow butter ( optional )
